Rice Recipes

The amount of fish sauce used in this recipe depends on brand selected and personal taste.

Plan ahead to enjoy this great Southeast Asian treat, as it must soak in water to cover for at least three hours. Traditionally, whoever is cooking sets the breakfast rice out to soak the night before, and then leaves the supper rice soaking in the morning before heading out to school, to the office, to the rice fields.

It takes a long time to cook, but it's worth it!

THIS DISH IS BASICALLY ASSOCIATED WITH THE MIDDLE EAST BUT POPULAR IN RUSSIA AND CENTRAL ASIA AS WELL. HOWEVER, IT HAS BECOME QUITE POPULAR IN THE USA OVER THE YEARS AND MADE IN SEVERAL VARIATIONS. THE TRUE MIDDLE EASTERN VERSION IS DONE WITH LAMB AS THE BASE AND IS DELICIOUS BUT I NEVER MADE IT THAT WAY MYSELF. THIS PARTICULAR RECIPE IS MADE WITH A CHICKEN BASE IN PLACE OF THE LAMB. I'VE SERVED IT IN SEVERAL RESTAURANTS WHERE IT HAD BECOME A STAPLE AS WELL AS HAVING GREAT REVIEWS EVEN FROM THE PRESS. YA GUNA LOVIT!

This recipe came from a restaurant no longer in business called El Charro and is the best I have found. We have been making it for about 20 years. It is terrific and easy! Enjoy!

My great-grandmother was Spanish and we lived off of this recipe. This rice dish freezes well.

While making the individual sushi, have a bowl of water and vinegar mix to keep your fingers moist.

I don't know how many servings this will make

This really is good, and almost as nice as the kind you stand stirring for half an hour. I often use it when I've got lots going on the stove and don't have time for the more authentic version.
